Method
- For 1 serving,
- ¾ cup brown rice(195 g), cooked
- ½ cup rotisserie chicken(60 g), shredded
- 1 cup vegetable(225 g), roasted
- ¼ cup pico de gallo(45 g)
- 2 tablespoons plain yogurt
- 2 tablespoons fresh cilantro, chopped
- 1 wedge lime
Method
- Place the brown rice, shredded chicken, roasted vegetables, pico de gallo, and yogurt in a bowl or resealable container. Garnish with chopped cilantro and the lime wedge.
